To All Tower Club Members:

James ClaryAs I'm sure most of you have heard by now, I have been named the new General Manager for the Tower Club. When Jacque Dowdie offered me the position, it was an easy decision to make. For the last four years I have been the Director of Culinary for Pyramid Foods (aka Price Cutter). The position was challenging and extremely rewarding. My eyes were opened to a whole new business and the skill sets I learned under the tutelage of Erick Taylor and the rest of the corporate team at Price Cutter will serve me well in the years to come. But as satisfying as the job was, I have missed doing what I believe I was called to do in life; operate fine dining restaurants.

For those of you that don't know me, here's a brief summary of who I am. I'm a Springfield native who was raised by parents who were extremely fond of fine food and wine. My Father was a physician who told me several years ago that I could make an omelet by myself when I was six. I took my first restaurant job at the age of 15 and worked along side current Tower Club Executive Chef Brad Lyons and current Pastry Chef, Vic Pace. By the time I was 18 I knew I wanted to own my own restaurant.

After attending Tulsa University, I was very fortunate to meet Robert Merrifield who owned The Polo Grill in Tulsa. Robert was the consummate restaurateur who had an incredible eye for detail and taught me the finer points of providing guests with exemplary service. I moved back home to Springfield in1989 to fulfill my dream and opened Clary's American Gill on February 3rd that year. I was incredibly fortunate to have had Clary's for almost 18 years when I sold it in 2008.

So now that I'm here, I'm sure you're wondering what you can expect in the way of changes at our club. Ere are a few things you can expect in the coming months;

  • A well trained service staff who are being challenged to serve you well beyond your expectations
  • A new wine list-first version is in service, but there will be more changes coming.
  • A new menu that will feature the best foods available from across the globe. Chef Lyons and I are reinventing our cooking. We are making initial contacts with local farmers and intend to begin using organic, all natural, and chemical free food whenever possible. The new menu will feature artful and creative vegan and vegetarian dishes as well as Prime Grade beef, free range poultry, and fresh fish from the clean waters of the Northwest and Hawaii.
  • A remodel of the facility which will include moving the main dining room back to floor 21. The new dining room will be made warm and intimate, yet flexible enough to use for large parties and weddings if necessary.
  • Off site catering services
  • New membership privileges that will include among other things cooking classes with Chef Lyons and myself.

These are just a few things we are working on. Thank for your patience while the transformation is undergoing. As they say, "Rome wasn't built in a day" but when we are done, The Tower Club will sit in it's rightful position as the best fine dining facility in the area.
